MEET WINEMAKER ANDRO TOMIĆ
Living on the island of Hvar and making top quality wines is, for us, both a challenge and a logical choice. As early as the 4th century BC, the Ancient Greeks brought the grapevine to this sunny island and started planting it on the fertile fields of the ancient town of Pharos. Throughout the centuries of rich and turbulent history, the people of Hvar cultivated their vineyards with great skill and care, blessed with the lushness of the Mediterranean. Grapes and wine gave them safety, food and medicine. They grew some of the finest varieties in this area, but the challenge still remains: how to turn this richness and harmony into great wines.
At the end of the 19th century, the island of Hvar was home to 22,500 people and 1,200 mules, donkeys and horses, and had a total of 5,750 hectares of vineyards. Today, Hvar has only 300 hectares of vineyards…
Andro Tomić was born on the island of Hvar and has dedicated his whole life to wines and oenology. After 20 years of professional training in France and elsewhere, he decided to return to Hvar to produce his own wines. Firmly believing that Hvar, with its authentic varieties, climate and exceptional location of vineyards, can reclaim its long lost reputation in the wine world, Andro follows the 150-year long tradition of family winemaking. His legendary wines like "1991" were proof of the high potential of the indigenous variety Plavac Mali and paved the way for a winemaking and viticulture renaissance in the region. In 1997, he founded the company Bastijana with the primary aim of producing top quality wines and promoting wine culture. We strive towards producing highest quality wines and preserving a long tradition, continually enriching it with new ideas.
None of this says much about his personality, but that is beyond words anyway.
FAMILY TOMIĆ WINERY
Our new winery is situated in Jelsa, a small coastal town with a long winemaking tradition. We produce between 130,000 and 150,000 bottles a year and, alongside the members of our family Tomić, twelve other people from the island of Hvar work to achieve that.
We cultivate autochthonous grape varieties and knowledge, but we experiment with new ones as well. Constantly enhancing the production of red, white and rosé wines with modern technologies, we strive towards making them ever better. We pay particular attention to the production of Prošek – the original Dalmatian desert wine made from selected and dried grapes of the highest quality local varieties.
We have integrated the HACCP (Hazard Analysis of Critical Control Point) self-control system throughout the production facility, thus ensuring wine quality and safety. (Tomić Winery is also equipped with a laboratory where we perform analyses of basic parameters to control the quality of wine during all stages of production and aging, as well as controlling the quality of finished wine. An external certified institution conducts final analyses of wines before they are shipped to market.)
We are especially proud of our wine tasting venue, buried in stone bellow the winery and modelled on the ancient Roman dining room called triclinium. It is carved out of stone, with ceilings made out of tufa and pillars made out of travertine, which was the method of construction used in Diocletian’s cellars. We intended it for ourselves, as well as anyone else who wishes to escape the world for a while and experience Hvar’s history, wines and stones in their indivisible connection.

ISLAND HVAR HIGH QUALITY GRAPES
Since wine production is decreasing in this area, we decided to plant our own vineyards. Our vineyards are located in the area around the town of Hvar, in Vira bay, on the fields of Stari Grad (the Greek “Ager”), and in the area around Jelsa. We have 10 ha of our own vineyards,most of which are organic vineyards. We are increasingly moving towards organic grape growing; apart from the fact that organic production provides healthy grapes and good wine, it also ensures the preservation of the environment and human health. The rest of the grapes come from our regular grape growers and suppliers. We regularly visit our growers and have stringent quality standards to ensure that we get the best possible grapes.
We use different grape varieties to make our wines, predominantly Plavac Mali as the red variety, and Pošip and Bogdanuša as the white. We also grow Cabernet Sauvignon, Cabernet Franc, Merlot, Yellow Muscat and several other varieties that have taken root here.
